Specialties
Our pork comes from two regional butchers: Landschlachterei Schlüter from Vienenburg and our friend, master butcher Henning Kluss, who runs the last butcher shop producing in the old town. His products, such as Gose-Sülze, Bierbeißer and Mettwurst, are even certified “Typisch Harz”. Both businesses stand for humane and healthy animal husbandry with straw bedding and plenty of space, GMO-free feed from local fields, herbs and minerals for high animal health, and no antibiotics, short transport routes and transparency in all areas.

Harzer Rotes Höhenvieh
Harzer Rotes Höhenvieh has been the native cattle breed of our region for centuries. When the breed was threatened with extinction in the late 1990s, some farmers in the Harz began breeding it again, including the Rotvieh breeding farm Wehmeyer in Düna/Osterode, from which we source our meat. The farm works to organic guidelines and has been awarded the Bioland seal. And you can taste the difference.
Due to the private breeding operation, availability is limited. Please understand if these dishes are not always available.

Beers
Gose, the original Harz beer, has been brewed in Goslar since the early Middle Ages. Because of the added coriander and salt it does not fall under the German Purity Law. It is an unfiltered, top-fermented beer specialty, mildly hopped and malty-smooth. Original gravity 11.5 °P, 4.8 % vol., 28 IBU. Rammelsberger Pils is named after Goslar's local mountain; we have brought this unfiltered pils back to life. Original gravity 11.3 °P, 4.6 % vol., 38 IBU.
